Preparation:
Cut peeled potatoes into fries, place them in cold water and leave sit for an hour. Dry with a paper napkin. Heat oil to 160 °C and fry the potatoes. Spice warm potatoes with truffle spice and serve with truffle ketchup and mayonnaise.
