Istrian white truffle Tuber Magnatum Pico is one of the most famous and appreciated in the world.
It is the most exclusive edible truffle in the world. Tuber Magnatum Pico connects with the roots of poplar, willow, oak and hazel trees. Its skin (peridium) is smooth and ocher yellow or olive yellow in color, and is sometimes characterized by a coarser cracked surface or bright red spots. The soil (fleshy interior) is firm and smooth, initially whitish, then pale yellow, ocher brown, reddish brown, impregnated with many thin white stripes.
It has an intense aroma and a strong but pleasant taste.
